White Chocolate Cranberry Oatmeal Cookies

The hospital where I had both of my babies brings warm cookies around every afternoon to your room. Serious. I am not kidding. Fresh, warm cookies. It was amazing. (Although I have been told that they may not do that anymore. Bummer!) I always asked for the cranberry white chocolate cookie. I absolutely love white chocolate but I had never made this combination myself before. I had this recipe on my pinterest board, recipes to try and I am so glad I did! The white chocolate mixed with the oatmeal and dried cranberries is such a wonderful combination. The only change I made was I added a little nutmeg. So, if you are looking to try something new and want a change from good ‘ole chocolate chip cookies, these are it!

White Chocolate Cranberry Oatmeal Cookies

An oatmeal cookie with white chocolate and dried cranberries.

Serves: 3 dozen
Ingredients
  • ½ cup butter, softened
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup flour
  • 1½ cup quick oats
  • ¾ cup dried cranberries
  • 1 cup white chocolate chips
Instructions
  1. Preheat your oven to 350 degrees. In a large bowl combine the sugar, brown sugar and butter with the paddle attachment for hand mixer.
  2. Add the egg and vanilla and blend well.
  3. Add the cinnamon, nutmeg, baking soda, salt and flour.
  4. Fold in the oatmeal, dried cranberries and white chocolate chips.
  5. Roll the dough into 1 inch balls or use desired size cookie scoop. Place them on a parchment lined* or greased baking sheet, 3 inches apart.
  6. Bake for 9-10 minutes, just until the edges are lightly golden.

Recipe Source: slightly adapted from Two Twenty One – (I added nutmeg. If you are not a fan of nutmeg, feel free to leave it out. I like the added flavor)

*I use parchment paper sheets. These fit a 18×13″ sheet pan perfectly. No need to mess with a roll of parchment paper. I love them! (affiliate links)

    Hey! So I made these a few days ago, and they were amazing! The only tricky part I experienced was forming the cookie dough was that they fall apart super easily and they were difficult to form. Do you have any suggestions? Thanks!!

      If they fell apart easily it could be a few things. How did you measure the flour? If you pack it in too tight (like brown sugar) then that could have made them dry and harder to form. When I measure flour, I scoop lightly and level it off. Also, did you use size large eggs? If you used medium sized eggs, it probably needed a little more liquid. I always use size large eggs when baking/cooking. Oatmeal cookies are a dryer cookie, and can be a little harder to form, but it shouldn’t be too difficult. I hope that helps!       about 3 dozen, depending on the exact size cookie you make it could be a little more or less 🙂

    I made these a little bigger and dipped them in crunchy white sugar before baking, they are so good!

    These look amazing! I want to try them, but am wondering if the cookies will be affected at all if I chill the dough?

      They may be a slightly more puffy cookie. I haven’t tried them with chilled dough though. Let me know how it worked out!
