These homemade granola bars are soft & chewy with a hint of coconut flavor!
It’s been about a year ago now that I was introduced to these homemade granola bars. My sister in law made them and brought them to the park where we met to let our kids play. She gave me one to try and I about died! Seriously amazing. I always thought making granola bars would be a lot of work but she assured me it was easy. So, I asked for the recipe & made some more as fast as I could!
Last week I made them for my sons preschool class. I love that for being pretty healthy, they taste like a treat! The coconut is so finely shredded that even if your kids don’t like coconut, they won’t be able to tell it’s even in there. Both of my kids love these granola bars. And you will too!
Chewy Coconut Granola Bars
These are better than store bought! They taste great & are healthy too!
Recipe type: Snack
Ingredients
- 2 cups rolled oats
- 1 cup wheat flour
- ½ cup wheat germ
- ¾ teaspoon sea salt
- ¾ cup unrefined coconut sugar
- ½ cup mini chocolate chips
- ½ cup unsweetened (light) shredded coconut*
- 1 egg
- 1 tablespoon vanilla
- ½ cup coconut oil
- ½ cup honey
Instructions
- Preheat your oven to 350 degrees. Grease a 9x13 inch baking dish.
- Mix the oats, flour, wheat germ, salt, sugar, chocolate chips and coconut in a medium sized bowl. Set aside.
- In a large bowl combine the egg, vanilla, oil and honey. (Measure the oil first, then the honey will pour out of the cup easily) Add the dry ingredients to the wet ingredients and stir till combined.
- Press mixture into your prepared dish and bake for 20 minutes (just until edges are slightly brown).
- Let cool for 5 minutes before slicing into bars. I suggest you cut desired width of your bars then cut down the middle of the pan, making 2 bars on each side. Makes about 18-20 bars. Store in an airtight container.
Notes
*I found the shredded coconut at sprouts. I use the light version. The shredded is great because they are very small pieces and kids don't notice it. If you can't find shredded coconut, you could put the coconut in a food processor before adding it. I use coconut oil, I like the flavor it adds. But you could use vegetable oil if you prefer. Coconut sugar can be found at wal-mart or sprouts in the baking isle.

its the egg used for a binder? my daughter is allergic to eggs…. wonder if peanut butter in place of the egg would bind things together a bit?

These look delicious! I wish my daughter had a mom like you bringing healthy treats. 🙂 I just recently put her in preschool, and I'm struggling to send her with snacks that she can tolerate (due to allergies). I'm definitely pinning these to try out for her. 🙂

Do these need to be refrigerated? Can I replace the wheat germ with flax meal? Thanks

I usually store mine in an airtight container. But I don't think it would hurt to refrigerate if you wanted them chilled. I would think you could substitute the wheat germ with flax meal but I haven't tried that before. If you do, let me know how you liked it!
