These bars are filled with cranberries, oats, white chocolate chips & a creamy cheesecake like center!
Lets talk about cranberries shall we? I seriously love them. Anything with cranberry and I’m all . Add in some oats and white chocolate, okay, I’ve gotta try it. So when I came across this recipe in my “Nestle Classic Recipes” cookbook (that I stole from my mom’s house, sorry Mom! haha) I just HAD to try it. We got together at a friend’s house a few weeks ago and I said I’d bring dessert. I am always up for bringing dessert cause I am always looking for ways to avoid cooking and bake instead. Don’t get me wrong. I love to eat real food too. But I enjoy baking more than cooking dinner. That being said, these bars were fairly easy to make and super yummy and unique. It’s always fun to try something new and out of the box. They don’t use fresh cranberries (just a can of whole berry cranberry sauce). I absolutely love baking with fresh cranberries but these work well in the recipe. So lets hear it. Do you like baking with cranberry? - 2 cups flour
- 1½ cups quick or old fashioned oats
- ¼ cup brown sugar
- ¼ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1 cup butter, softened
- 2 cups white chocolate chips
- 1 (8 ounce) package cream cheese
- 1 (14 ounce) can sweetened condensed milk
- ½ cup lemon juice
- 1 teaspoon vanilla extract
- 1 (16 ounce) can whole-berry cranberry sauce
- 1 Tablespoons cornstarch
- Preheat your oven to 350 degrees. Spray a 9x13" dish with cooking oil.
- Combine the flour, oats and brown sugar in a large bowl. Add the butter and mix until crumbly. Stir in the white chocolate chips. Reserve 2½ cups of the mixture for the topping.
- With floured fingers, press the remaining crust mixture into the prepared pan.
- Beat the cream cheese until creamy. Add the sweetened condensed milk, lemon mice & vanilla. Mix until smooth. Pour this mixture over the crust.
- Combine the cranberry sauce and cornstarch in a medium bowl. Spoon this mixture per the cream cease mixture then sprinkle the remaining oat mixture over the top. Press it down slightly.
- Bake for 35-40 minutes or until center is et. Cool completely before cutting into bars. Cover and refrigerate until ready to serve. (These can be made the day before if needed).
