Orange Basil Salad Dressing

This dressing is light with a lot of bite and totally addicting! 

It’s hard to make a statement like this is THE most amazing salad dressing ever. But in my opinion it is. Everyone has different taste buds and what might be delicious to one person is just okay to another. I guess thats what makes the world go round. We are all different. With that being said, I absolutely LOVE this dressing. Do I love other dressings too? Yes. But this one is my favorite for sure!

About the dressing. It’s light. It’s tangy and it’s totally addicting. My brother is the one that first told me about this salad dressing. He was staying at Jacob Lake Inn while on a hunt in Kaibab, AZ. The salad was reccomended so he decied to try it out. He says he was tempted to lick his plate clean it it was so good. And this is coming from someone who didn’t really like salads before trying this dressing.
So now every time we drive from Arizona to Utah (which is quite often to visit family) we stop at the Jacob Lake Inn for lunch and cookies. Totally makes the 11 hour drive more bearable! They make the most amazing cookies by the way! I think the cookie in a cloud is my favorite. But it’s really hard to choose. Anyways, for lunch I always get their orange basil salad and sometimes the cranberry cream cheese chicken sandwich. (I think I need to try to re-create that next!)

We told my in-laws about this place so they always stop there too. One time my mother-in-law asked what was in the dressing. The waitress said she couldn’t say but the cook came out and told her what he puts in it just not the measurements. So after playing around with the amounts I was able to come up with my version of their Orange Basil Dressing. After I thought I had it right I called my my brother to try it out. He couldn’t believe it! He said it tasted just like it. Now of course it’s never gonna be quite as amazing as theirs but it’s close enough to tide us over until the next time we are driving through.

Orange Basil Salad Dressing

This salad dressing has such a great flavor. It is a knock off of my favorite house dressing from a cute lodge up in Jacob Lake, AZ.
Ingredients
  • FOR THE DRESSING:
  • ½ cup canola oil
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • ½ cup orange juice
  • 4 tablespoons sugar
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • FOR THE SALAD:
  • chopped romaine
  • grape tomatoes
  • shredded carrots
  • sliced cucumbers
Instructions
  1. Put all the ingredients in a blender or food processor. Blend till smooth. Store in the refrigerator.
  2. Serve over chopped romaine and whatever toppings you have or like. I used tomatoes, shredded carrots and cucumbers. Feel free to add or change what you put on the salad.
Notes
This dressing is not thick. Kind of a watery consistency. I used fresh lemon juice and fresh orange juice. Jacob Lake uses orange juice from concentrate. Either is fine. Make sure you use canola oil. Other oils are too strong. Canola oil lets the other flavors shine. Also, don't be afraid of the cider vinegar. It's what gives this dressing bite!
