These oat groat pancakes are so light and fluffy!
This recipe is just like my Blender Wheat Pancakes but instead of using wheat kernels you use oat groats. Say what?! Yes, oat groats. They are the intact, hulled oat grain. They are full of fiber and minerals and oats help lower your cholesterol too! Read more about them here. This is a great visual of the different types of oats here. I got this recipe from my Aunt Sharon and Uncle Steve. They are great cooks and always have wonderful recipes to share.
I am calling this plate my Downton Abbey plate. I got it from my mother in law. It was her grandmothers (I think?!) And before I even saw the back that said they were Made in England, I felt like I was sitting down to eat at Downton! Who else has fallen for this show? It is kind of like a soap opera if you think about it but I just love it.
These pancakes are so light & fluffy! If you like oatmeal you have to try these pancakes. I am a big time pancake fan and these are at the top of my list. Wouldn’t you rather eat your oatmeal in pancake form? I know I would. But I am excited to try this recipe for groatmeal next!
Another great thing about these pancakes is they are free of refined sugar! (as long as you us honey) And make sure to top them with pure maple syrup.
Here is a close up of the oat groats. They may be a little harder to find than steel cut or rolled oats. You can purchase them in Arizona at Shars or Preparing Wisely or online. And if you are gluten intolerant I found oat groats that are gluten free! These pancakes would be great if you are needing something dairy (if using almond or coconut milk) & gluten free. *some affiliate links used
Blender Oat Pancakes
Oat groats are blended up to make a healthy, fluffy delicious pancake.

Ingredients
- 1 cup whole oat groats
- 1 - 1¼ cup milk or almond milk
- 1 tablespoons honey or sugar
- ¼ cup coconut oil or vegetable oil
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
Instructions
- Add the oat groats and milk to your blender. Blend on high for 5 minutes or until smooth. (If it is not blending well or seems a little thick, add a T. of milk at a time) Oat pancakes may need a little more milk than wheat pancakes. Just start with 1 cup and go from there.
- Add the honey, oil, salt, soda, powder and eggs to the blener. Blend for a couple of minutes.
- Pre-heat your griddle to medium-high heat. While it is heating up let the batter rest. Before you pour onto the griddle, give it a stir.
- Spray the griddle with cooking spray then pour 4 inch round pancakes onto the griddle. Cook for about 2-3 minutes per side. (Oat pancakes take a little longer to cook than wheat pancakes)
- Serve topped with butter or coconut oil, maple syrup and bananas or blueberries. Really whatever floats your boat 🙂 Makes approx. 12-15 pancakes.
