Peanut Butter Fingers

These “lunch lady” peanut butter bars are hard to beat! 
I believe these are nick named lunch lady bars because you used to be able to get these from the cafeteria lunch. Is that right? I personally never had the privilege of tasting their version (maybe it was my elementary school) but this recipe is a classic. If you have never tried these, please promise me you will make these the first chance you get!
These bars have an oatmeal and peanut butter base, a layer of whipped peanut butter then finally a creamy sweet chocolate frosting. It doesn’t get much better than this folks 😉

Peanut Butter Fingers


Ingredients:

3/4 cup butter
3/4 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
3/4 cup peanut butter
1 cup flour
1 1/2 cup quick oats
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup peanut butter, whipped
FOR THE FROSTING:
1/4 cup butter, softened
4 cups powdered sugar
1/4 cup cocoa
1-3 tablespoons milk

Instructions: 

Pre-heat your oven to 350 degrees. 
Mix together in a stand mixer or medium sized bowl the butter, sugar, egg, vanilla, peanut butter, flour, oats, salt & soda. Spread on a cookie sheet leavening 1 inch space around all sides. Bake for 10-13 minutes or until it no longer looks “wet” on top. Cool.
Whip your 1 cup peanut butter then spread over the top.
FOR THE FROSTING: Beat together the butter, powdered sugar, cocoa and milk. Adding milk until desired consistency. Spread over top of peanut butter. Let set up in fridge then cut into fingers. Enjoy!
