These easy almond roca bars are done in 20 minutes! A soft, almond flavored cookie bar topped with chocolate and almonds.
You know what is super weird? When you realize that you are in your 30’s and are laughing at your kids who are doing things that you used to do as a child. Like on Easter morning. My kids are all about the chocolate. Like how fast can we they get it in their mouth (with the wrapper still on!). My Mom has a picture of me on Easter morning with chocolate smeared on my cheeks & hair curlers in my hair. I’ll have to get a copy. It’s pretty funny and slightly embarrassing. I feel like I was born with a chocolate addition. haha.
Whenever I come across a recipe that is a family classic I instantly wanna try it. Classic = awesome. And done in 20 minutes start to finish?! Okay, I have to try it. I love a good dessert that has minimal ingredients and involves chocolate. It also has almond extract in the dough (they are called Almond Roca Bars ;)) I’ve come to find out that you either love it or hate it. Which isn’t surprising, it’s a strong, distinct flavor. I happen to LOVE it! I found this recipe over on The Food Charlatan. Every picture on her blog has me wanting to grab the food off my screen. Plus her writing is super witty and always a good read. If you wait long enough (you can put in the refrigerator if you are impatient like me) the chocolate will set up. But these are super yummy eaten warm and all gooey.
Why do I love a picture of melted, messy chocolate so much? Give these bars a try! Quick, easy and so delicious!
- 1 cup butter
- ½ cup white sugar
- ½ cup brown sugar, packed
- 1 egg
- ¼ teaspoon salt
- 1 teaspoon almond extract
- 2 cups flour
- 1½ to 2 cups milk or semi sweet chocolate chips
- sliced or chopped almonds, optional
- Preheat your oven to 350 degrees and spray a 13x9" pan with cooking spray.
- In a stand mixer or large bowl, Beat the butter and sugar together till combined.
- Add the egg, almond extract & salt then beat in the flour.
- Spread the dough into the prepared pan (you can spray your fingers with cooking spray or wet them if the dough sticks).
- Bake for 13-15 minutes or until it is set on the edges. If you like a more crispy bar, wait till it is set in the middle).
- Remove from the oven and sprinkle generously with chocolate chips. Let it sit for about 10 minutes then spread the chips when they have melted. If you are adding the almonds, go ahead and sprinkle them on so they will adhere to the chocolate.
- Let the chocolate set up or you can eat them still melty. Either way, these are good!

I googled almond roca bars just now because I really need to update my post for this recipe, and your page popped up. I was like oh, her family must have the recipe too, they look just like ours. and then I saw you got it from me, haha! love it. These remain a family favorite. Your pictures look so great. Thanks for sharing a recipe my family has loved so well for so long!
