Chocolate Peanut Butter No Bake Cookies

These classic cookies are pretty much a favorite for everyone, am I right?! I am pretty sure these are the first kind of cookie I learned to make on my own. What is not to love about chocolate, peanut butter and oatmeal?! Plus, in Arizona, these are perfect to make in the summer. No heating up your oven and are so yummy chilled too.

Speaking of summer. Last week it was cold, rained for days and we even had snow in the desert! Serious. We drove 30 minutes from our house (we live in the Phoenix / East Valley) and were in the snow! It was crazy to see the mountains all covered in snow! I am gonna have to remember that when it’s hot in like 2 weeks ;). I feel like summer is getting close I don’t know if I’m ready. At least we have cookies that don’t require an oven that can take the summer blues away. Didn’t know that was a thing? It totally is. The blazing heat can totally make you sad. I’ve lived here for pretty much my whole life and I still dislike the heat. But you know what they say…you don’t have to shovel sunshine, haha!

How to make No Bake Chocolate Peanut Butter Cookies

  1. Start by gathering your ingredients. Grab a stick of butter, milk, sugar, cocoa powder, oats, peanut butter & vanilla. Measure out the oats, peanut butter and cocoa and set aside. Line a couple cookie sheets with parchment paper so that’s ready as well.
  2. Melt the butter over medium heat. Once melted, add the sugar and milk. Stir until it comes to a boil, and boil for 60 seconds. Remove from the heat!
  3. Add the oats & coco powered. Stir it up, then add the peanut butter and vanilla. Add as much or as little peanut butter as you like. Start with a spoonful then have a taste. Then add more if you would like. Or measure out 1/3 cup. That’s about the amount I add every time.
  4. Use a cookie scoop (this is the easier and least messy way) and scoop out the mixture on to parchment or wax paper lined baking sheets.
  5. Let cool and then enjoy! Or eat by the spoonful out of the pan. I’ve never done that ;). haha

Can I use white sugar & brown sugar?

YES! These cookies are so good with 1 cup of white sugar and 1 cup of brown sugar! Have you tried them that way? Of course they are great with all white sugar (that is the more traditional way of making these cookies). But next time, try mixing it up and let me know what you think!

Can I use quick oats in place of the old-fashioned rolled oats?

Yes. Most people actually prefer quick oats in no bake cookies. Maybe I’m the weird one, but I much prefer the old-fashioned oats. I like the texture so much better. I also feel like the cookies are a little dryer when you use quick oats. But it’s totally a personal preference. The old fashioned oats will soften up as well. So the next day they won’t be as chewy.

No Bake Cookies

Do you call them No Bake Cookies or just No Bakes? I seem to call them No Bakes. Even though they are really a chocolate peanut butter no bake cookie. No Bakes is easier and everyone knows what they are. Right? I also heard that these cookies used to be called Preacher Cookies.

The story goes, that a housewife would see the preacher coming on a horse up on the mountain, and by the time he got to the house, the cookies would be ready to serve with some tea or coffee! I had never heard this before. My husband likes to call these cookies another name…gorilla turds, yuck.

And one last thing to talk about. I feel like these cookies tend to more popular with women than men. Do you feel the same way? Maybe it’s the chocoholics in us :).

No Bake Cookies

Chocolate Peanut Butter Oat Cookies! Ready in minutes and don't heat up your oven! Yes, please and thank you 🙂

INGREDIENTS
  • 1/2 cup butter (salted)
  • 1/2 cup milk
  • 2 cups sugar (can do all white or 1 cup white, 1 cup brown)
  • 3 cups oats (regular or quick)
  • 1/3 cup coco powder (or about 5 to 6 tablespoons)
  • 1/3 cup peanut butter (more or less to taste)
  • 1 teaspoon vanilla
INSTRUCTIONS
  1. Lay out parchment paper (or wax paper) on the counter or on baking sheets and set aside.

  2. In a medium sized pot, melt the butter over medium heat. Add the milk and sugar and stir frequently until it's all melted. Have a timer ready to set to 60 seconds. 

  3. When it comes to a boil (bubbles while you stir) start a timer for 1 minute. Stir and as soon as that minute is up, remove from heat. 

  4. Add the oats, coco powder, peanut butter and vanilla. Stir until creamy.

  5. Using a cookie scoop or spoon, drop the cookie dough on to the prepared parchment paper. Let set and enjoy!

  6. Let the cookies rest until set up. Store in an airtight container.

Recipe Notes
  • I like these cookies best with 1 cup of white sugar and 1 cup of brown sugar!
  • Make sure you boil for 1 minute and not longer. If you boil too long the cookies will be dry and thats a bummer. If you don't boil long enough, they won't set up. I have found that as soon as it boil (bubbles while stirring) and I start the timer, 1 min is perfect for me. 
  • I usually use old fashioned oats. A lot of people use quick oats. I prefer the chewy texture from the old fashioned oats but use what you like best 🙂

    about how many cookies does this recipe make? im looking to make about 40 cookies using this recipe

      Yes you should be able to get 40. I’d just use a smaller cookie scoop 🙂
