Texas Ranger Cookie Recipe
I’ve never been to Texas. I wanna go so bad. One of my dearest friends moved to Austin and I’m dying to go visit. I need to make it happen. Always, that has nothing to do with these cookies except that they are called Texas Ranger Cookies ;).
Can I use a different cereal in place of the crisp rice cereal in these cookies?
Yes you can! I saw a version of these cookies that used frosted flakes! Hello, gonna be trying that version next time. However the rice crispy/crisp rice cereal was fantastic!
Do I have to use mini chocolate chips?
No. If you only have regular semi-sweet, those will work too. I just liked the mixture of the small semi-sweet and the larger milk chocolate. I love mixing semi-sweet and milk chocolate chips in cookies. Makes them rich, but not too rich!
Whats the difference between Cowboy Cookies and Ranger cookies?
I don’t know the real answer to this, but from what I can tell, cowboy cookie recipes all have pecans. Some cowboy cookies have coconut some have cornflakes too but they all had the pecans & oatmeal. These ranger cookies don’t have nuts (but do have coconut & oatmeal). So I’m thinking that pecans are what makes cookies “cowboy” and no pecans make them ranger cookies? If anyone can clarify, please do so in the comments!

Chocolate chip cookies with oatmeal, coconut, chocolate (duh!) haha and crispy rice cereal! These are delicious and have a nice chewy crunch.
- 1 cup flour (5 ounces)
- 1 cup rolled oats (not quick oats)
- 1/2 cup sweetened shredded coconut
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/2 teaspoon vanilla
- 1 cup crisp rice cereal
- 3/4 cup mini semi-sweet chocolate chips
- 1/2 cup milk chocolate chips

Heat your oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.

Whisk the flour, oats, coconut, baking soda, baking powder and salt all together in a bowl then set aside.

In a stand mixer or large bowl beat the butter & sugars till creamy. Add the egg and vanilla and mix till smooth.

On low-speed, mix in the flour mixture until combined. Scrape the bowl as needed.

Stir in the rice cereal and chocolate chips just until combined.

Use a medium-sized cookie scoop and form the dough into balls. Place on prepared baking sheets and lightly press down on the cookie dough balls with the bottom of a glass cup sprayed with cooking spray (or you can use your hand).

Bake for 10 to 12 minutes or until the edges are just starting to brown. Store in an air tight container.
-You can use corn flakes (or even Frosted Flakes!) in place of the rice cereal.
-Also, any combo of chocolate chips can be used. I just really like to mix semi-sweet & milk chocolate. It's the best of both worlds 🙂
