Tomato Sandwich

The best way to make a tomato sandwich!

Ok so this recipe is not anything crazy but I just felt like I had to share this simple & delicious sandwich. It is the best summer sandwich. And actually my favorite sandwich ever! When tomatoes are in season, I could have a tomato sandwich for lunch everyday. My grandpa has THE best garden. He is a master tomato grower. If you can’t get your hands on a homegrown tomato, try a farmers market. This sandwich is really only good if you have a quality tomato. Please don’t use a grainy tasteless one! It just won’t be the same.

I don’t have a garden of my own but lucky for me I’ve got lots of family and friends close by that love to share! I got the tomato for this particular sandwich from my brothers garden. He is out of town and said I could just run over and pick anything I need! He’s got a bunch of sweet yellow grape tomatoes that I am dying to make a salad with!

If you have never tried a tomato sandwich, promise me you will try it! And if you have, tell me your favorite way to eat a homegrown tomato?! Oh, and make sure you eat your sandwich with a side of salt and vinegar chips 🙂

Ingredients
  • 1 homegrown tomato
  • 1-2 slices of 9 grain bread
  • 1 tablespoon mayonnaise
  • yellow mustard
  • butter lettuce
  • 1 slice of swiss cheese
  • 2 thinly sliced dill pickles (optional)
  • salt and pepper
  • *natures seasons
Instructions
  1. Toast your bread. Spread desired amount of mayonnaise onto bread. Add desired amount of mustard.
  2. Slice your tomato and layer on the bread. Sprinkle with plenty of salt and pepper. Top with lettuce and then swiss cheese.
  3. If you want an open face sandwich, leave off the 2nd piece of bread. If I feel like an open face sandwich, I usually leave the pickles off. If I want a thicker, more filling sandwich, I will sometimes add the pickles and other slice of bread.
  4. *My Grandma loves to sprinkle Mortons "Natures Seasons" in place of salt & pepper on her sandwich and she also adds fresh sliced onions.
Notes
It is very important to toast the bread. If you have a quality tomato, they are very juicy. So if you toast the bread it helps the bread not get too mush from all the yummy juice. Make sure you use plenty of REAL mayonaise. Although I like miracle whip sometimes, this sandwich is best with the real stuff. Feel free to use whatever cheese you prefer. Also, any lettuce will do, but I love that butter lettuce stays fresh and has a nice balance between being crisp and soft.
