These cookies are simple to make and have a melted chocolate & caramel center!
After I had my little girl a good friend and neighbor brought me a plate of these cookies. Pretty sure every new mom deserves a plate of cookies. A little treat after feeding your baby is sometimes all it takes to get you (or me at least!) through those sometimes long, sleepless nights! At first they look pretty basic. I’m not complaining, a cookie is a cookie right? But after the first bite you will be saying “mmmm”! What could be better than a melted chocolate and caramel surprise center?! Maybe the smell of a newborn baby 🙂
These cookies took me back to my 7th grade home economics class. I had the coolest teacher. I still have all the recipe cards we made! One of the recipes was peanut butter cookies. We wrote all the different ways you could make the cookies. Plain with a fork criss crossed on the top or a hershey kiss pressed in the center after they are baked. Â But my favorite way was when we made them with rolos and bite sized snickers in the center. I’ll have to make the recipe and post it soon.
So if you are looking to add one more cookie to your holiday baking list, add these. They are super easy to whip up and will add a nice variety. If you wanted to dress them up for presentation, you could always drizzle some chocolate flavored almond bark over the top. I think I’ll try that next time.
The original cookie recipe used a hershey kiss in the center. And they are actually called “Forgotten Kiss Cookies” I made these both ways. The kiss is really cute and I loved them. But I think the rolo center is my favorite. My kids liked both equally as well. You even try a bite sized snickers if you wanted go crazy 😉 There are no eggs and only 6 ingredients! Love a simple recipe.

When I was writing this caption on the picture it made me laugh! After I had my daughter, my son (just 2 at the time) would randomly say “there’s a baby in there!” while pointing to the bedroom where she was sleeping. It was like he was just trying to wrap his head around the whole situation. I can still picture him pointing and saying this in his cute little voice. They really do grow up so fast!
Shortbread Surprise Cookies
Serves: 24-30 cookies
Ingredients
- 1 cup butter, softened
- ⅓ cup sugar
- ⅓ cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 24 - 30 rolos unwrapped (or hershey kisses)
Instructions
- Preheat oven to 350 degrees. Spray a cookie sheet with cooking spray or line with parchment paper. Set aside.
- Beat together the butter, sugars and vanilla.
- Slowly add the flour and mix well.
- Form the dough into 1 inch balls around each rolo (or kiss). Place on prepared cookie sheet.
- Bake for 8-10 minutes. Place on a cooling rack for 5 minutes.
