Pastrami Cheeseburgers (30-Minute Supper)

A beef burger topped with pastrami, sauerkraut, swiss cheese and a special sauce! Done in 30 minutes too!

It’s the last week of school for my 1st grader! We are so excited for summer. This year I am trying to be more prepared with having some sort of schedule but still be a fun mom  😉 Cause no plan turns into long, crazy days. I wanna have fun, not be too structured but also not lose my mind come 4:00 PM. Are you with me?! haha. So far we are gonna do swim team, (lots of swimming! cause it’s SO darn hot where we live) a week of basketball camp at the high school and then we will head up north to the mountains and stay at my parents cabin to escape the heat and also be in Utah for part of the summer!

I am having so much fun trying new recipes from the Cook’s Country magazine. I got a subscription for Christmas from my brother-in-law. The 30 minute suppers always catch my eye. I’ve been making a bunch of them. They are unique, easy and always delish. This is one of them. Would be perfect for a BBQ when you want something more jazzed up then your typical hamburger. Also, don’t be afraid of the sauerkraut. I used to be afraid. But not anymore. It is so good! Adds such great flavor. And then the special sauce. It is kind of like a sandwich spread or ‘fry sauce’. Easy to whip up and adds wonderful flavor to the burger.

Pastrami Cheeseburgers (30-Minute Supper)

A classic burger topped with pastrami, sauerkraut and melted swiss cheese. A tangy sauce adds the perfect finishing touch. Done in 30 minutes too!

Serves: 4
Ingredients
  • 6 Tablespoons mayonnaise
  • 3 Tablespoons ketchup
  • 2 Tablespoons pickle relish (sweet or dill)
  • ½ teaspoon pepper
  • 4 kaiser rolls (or hamburger buns) toasted
  • 4 hamburger patties (I grilled costco frozen patties or you can make 4 patties out of 1 pound lean ground beef)
  • salt & pepper to taste
  • 6 ounces thinly sliced deli brisket pastrami
  • 1½ cups sauerkraut, drained and pressed dry
  • 4 slices deli swiss cheese
Instructions
  1. Whisk your mayo, ketchup, relish and ½ teaspoon pepper together in a small bowl then set aside.
  2. Toast your buns and set aside.
  3. If you are going to grill your burger, go ahead and grill, season with salt & pepper and place on a plate when cooked, then cover with foil to keep warm. If you are going to cook the burger on the stove top, heat a 12" skillet over medium-high heat.
  4. Add the patties, season with salt & pepper and cook for 2 minutes (don't flip). Flip over and cook another minute. Check to make sure it's cooked to your preference then transfer to a plate and cover with foil.
  5. Add the pastrami to the same skillet (if you are grilling your burger, heat a skillet over medium-high heat). Cook pastrami for about 3 minutes. Stir in the sauerkraut and cook until heated through (about 2 minutes). Remove the skillet from the heat and separate the pastrami/sauerkraut mixture in to 4 sections (still int he skillet), then top with the cheese. Cover and let it melt.
  6. While it is melting, spread the mayo mixture on the roll tops and bottoms. Transfer burgers to roll bottoms. Top each burger with 1 portion of the pastrami mixture. Place roll tops on burgers & serve!
