
These muffins have no added sugar but all the flavor and texture! Super moist and sweetened with maple syrup!
Preheat your oven to 375 degrees. Line your 12-count muffin tin with liners or grease and then set aside. I love to use these parchment liners!
In a medium size bowl, measure you coconut oil. Then melt in the microwave if needed. Add the oats, applesauce, egg, mashed banana, maple syrup & vanilla. Stir together then set aside.
In a large bowl measure the flour (spoon and level, don't pack it in or measure 3.75 ounces). Add the baking powder, baking soda, cinnamon & salt. Stir till combined. Make a well and add the wet ingredients. Fold together just until there are no more flour streaks but be careful not to over-mix the batter.
Distribute the batter evenly among the 12 muffin cups (I like to use a large cookie scoop for this!) Bake for 15-20 minutes or until a toothpick comes out clean. (I baked mine for 17 min.)
Once slightly cooled remove and let cool completely on a cooling rack.
-You can use melted butter in place of the coconut oil
