Lemon & Tomato Green Beans

I’m gonna take a break from the pumpkin and halloween baking today and share an amazing side dish. Don’t get me wrong, I am all about the pumpkin. Speaking of, have you been to Trader Joe’s recently? They have so many pumpkin things it is unreal. I wanted to buy one of everything. I tried the pumpkin soup and it was exceptional. Anyways, back to the green beans.
I got this recipe off of a fresh package of green beans from Costco a couple of years ago. I love the tomato in this, not only for the color (the red & green would be perfect for Christmas time) but for the flavor it adds to the dish. Also, lemon? Yes, please! I love lemon. You just can’t go wrong with fresh squeezed lemon juice. And mixed with the butter & brown sugar, this side dish is a home run!

Lemon & Tomato Green Beans

Ingredients
  • 1 lb. fresh green beans
  • ½ cup butter
  • ½ cup chopped onion
  • 2 small garlic cloves, chopped
  • 2 T. brown sugar
  • 2 T. fresh lemon juice
  • 1 tsp. salt
  • 1 tsp. dried oregano*
  • ¼ tsp. pepper
  • 2 medium ripe tomatos
Instructions
  1. Wash green beans. Trim ends & cut into 1 inch pieces. Cook green beans on medium heat with a small amount of water (about half way covering the beens) until crisp & tender (about 18 min). Make sure to stir and watch them, so they don't burn. Drain and set aside (keep warm).
  2. In a skillet, melt the butter. Add the chopped onion & garlic. Cook on medium-low for about 3 min. Then stir in brown sugar, lemon juice, salt, oregano & pepper. Add tomatoes & green beans and heat through.
  3. Serve immediately.
Notes
*I used an italian seasoning mix (that had oregano in it) and I really liked it. So feel free to use just oregano or any italian seasoning you like.
UPDATE: I made these again at Christmas and did a slight variation and wanted to share it! I used 2 pounds of green beens. Instead of tomatoes, I used tasted sliced almonds. I didn't double any other ingredients but the green beans and they were wonderful! I have used dark brown sugar and really liked the flavor it added. But light brown sugar will work too. Enjoy!

    In love with these green beans! I’ve tried them as written and with the almonds, too. Super delish. I’ve also cheated and used Trader Joe’s frozen green beans. Thank you for your wonderful, inspiring ideas for helping me put dinner on the table!
