Cilantro Lime Coleslaw

INGREDIENTS

  • 1 head green cabbage (or bag of shredded cabbage) I like angel hair coleslaw
  • 1 bunch cilantro
  • 2 jalapeƱos (optional)
  • 3 tablespoons avocado or olive oil
  • 2 limes
  • salt & pepper, to taste

INSTRUCTIONS

  1. Core and slice the cabbage finely. Place in a medium sized bowl.

  2. Remove the cilantro from the stems and chop and add to the bowl.

  3. Dice up the jalapeƱos fine. Make sure to remove the stems and seeds if you don't want it too spicy. Add to the bowl.

  4. Add the oil to a small bow and the juice of the 2 limes. For extra flavor you can add a little zest. Mix together then add salt and pepper to taste.

  5. Pour the oil mixture over the cabbage and toss to combine. Let sit for 15 min. before serving. I like to have it rest in the fridge.
