  • 4 peaches (medium-sized)
  • 1 red onion
  • 1 red bell pepper
  • 1 jalapeno
  • 1 lime
  • 1/2 cup cilantro (loosely packed)
  • 1/4 tsp. chili powder (optional)
  • tortilla chips

  1. Peel and chop the peaches. Place in a medium-sized bowl. (I like to cut the peaches into wedges, then peel each piece before cutting it up. You could also boil the peaches for 30 seconds (until the skin splits, then remove with a slotted spoon right away to ice water to stop them from cooking. The skin will come off easily this way.)

  2. Dice the red onion & red pepper into small pieces and add to the bowl of peaches. Dice up the jalapeƱo and remove the seeds if you don't want it too spicy. Add some seeds if you like a little more spice. Add to the bowl. (Make sure you wash your hands after handling the jalapeno!)

  3. Remove the cilantro leaves from the stem (don't worry if you don't remove it perfectly). Chop the cilantro up and add it to the bowl.

  4. Squeeze a lime (I like to use a small citrus press!) into the bowl and then season with salt and pepper to taste. Add the chili powder if using. Gently stir, cover & refrigerate or serve immediately. Serve with tortilla chips, tacos etc.
