White Chocolate Pudding Snickerdoodle Cookies
So I’m not a snickerdoodle fan. There I said it. I know that’s probably weird since they are such a popular cookie. They just don’t get me excited. Where is the chocolate? So when I came across this recipe on instagram with white chocolate chips (and white chocolate pudding mix too!) I was super excited to make them.
The pudding mix makes them have a sweet flavor and makes them soft too! I love pudding cookies. I don’t make them all the time, but when I do, they are a special treat.
How to make white chocolate snickerdoodle pudding cookies:
- cream the butter, sugars and dry pudding mix
- add eggs and mix till smooth
- measure your flour then add to the wet ingredients along with the soda, salt & cinnamon
- and then the best part, stir in the white chocolate chips!
- scoop, roll into balls, then roll in cinnamon/sugar mixture
- place on cookies sheet and bake!
- then you STUFF (your face…haha)
Do I have to roll these in the cinnamon/sugar mixture?
Nope! If you want to skip that step, totally ok. But I will say, it makes them that much more delicious :).

White chocolate snickerdoodle pudding cookies filled with white chocolate chips and then rolled in cinnamon & sugar! These are amazing! Everyone will love them.
- 1 cup butter
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1 3.9 oz package white chocolate instant pudding (dry mix only)
- 2 large eggs
- 1 tablespoon vanilla
- 2 1/4 cups flour (11.25 ounces)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 12 ounces white chocolate chips (2 cups)

Heat your oven to 350 degrees. Line your baking sheets with parchment paper

In a small bowl, measure out 1/4 cup white sugar and 2 teaspoons cinnamon. Mix and set aside.

In a large bowl or stand mixer, beat the butter and sugars. Add the dry pudding and mix well. Beat in the eggs & vanilla.

Add the flour, soda, salt and cinnamon and mix until just blended. Stir in the white chocolate chips.

Use a medium cookie scoop to scoop the dough. Roll into a ball and then roll into the cinnamon/sugar mixture. Place on prepared baking sheets. Bake for 8 to 10 minutes.

If some of the cookies spread, take your spatula and lightly press around the edge of the cookie to form a nice circle shape. Totally optional but I always do this to my cookies if they need it.
