These healthy monster cookie granola bites have no flour or sugar. Just peanut butter, oats & honey mixed with a few other healthy ingredients for the perfect no-bake snack!

Oh man, these little bites are good! I am so excited to share this recipe with you. I am always excited to share recipes, but today I am just extra excited. I love easy, healthier recipes that taste amazing.  Keep these babies in the freezer to curb a sweet craving. They have no added sugar (just honey!) and they have a bonus healthy ingredient. I know, I went there. I do that sometimes. As long as you don’t count the mini m&m’s or chocolate chips 😉 It’s basically peanut butter and honey mixed with oats and a few extra good things. One being wheat germ. The homemade granola bars on my site have wheat germ and after I read up on it, I realized how good it is for you! My daughter went crazy over these. These would be perfect for a no-bake summertime snack or back to school treat. I love having these in my freezer. They keep me from reaching for a cookie.

I was inspired to make these when I first saw them over on The Baker Mama’s Instagram! Most all the no-bake type granola recipes have some sort of peanut butter/nut butter & honey to hold them together. We love the granola balls that are already posted on my site and I knew my kids would love the added mini m&m (adds such a fun color too!) I also added wheat germ to these because in the other granola bite recipe, I add ground flax seed. I figured I could add a little less oats plus some wheat germ and it worked great!

Ingredients
  • 2 cups rolled oats
  • 1 cup peanut butter (I used no sugar added)
  • 2 teaspoons vanilla blend
  • ⅔ cup honey (I used raw)
  • ½ cup wheat germ
  • ½ cup mini m&m chocolate candies
  • ½ cup mini chocolate chips
  • 1 Tablespoon coconut oil
Instructions
  1. Line a cookie sheet with parchment paper and set aside.
  2. Combine all the ingredients in a large bowl. Mix till combined.
  3. Use a cookie scoop or spoon to make rounded tablespoon sized balls. Roll in your palms to make nice round balls. Place on prepared cookie sheet. Refrigerate for a couple hours. These will stay fresh in the refrigerator for a week or in the freezer for a few months.
  4. Makes around 30-40 bites.
Notes
I love raw honey. Not only is it better for you, I think it tastes better as well. Any honey will work, but I suggest local, raw honey if possible!
