Glazed cheese croissants are unlike any other roll I have ever had! The unique texture and simple ingredients set these apart. Everyone will love these rolls!
Glazed Cheese Croissants
Lets talk about these cheese croissants shall we?! They may not seem like much, but I am here to TELL YOU! Sorry to shout. But these were devoured by all. We had my sweet Grandpa over for dinner last week and I made these to go along with a pasta bake (recipe coming up next!). They were very simple to mix up and roll out and bake and my Grandpa (and the rest of my family) LOVED THEM! I had never had these in all my life but that has changed. Don’t think because there is cottage cheese in them (I know!) that they are weird or can’t be good. it melts into the dough. They have the best texture. So unique and the sweet glaze on top is what takes them to the next level. Make these ASAP!
What ingredients do you need to make these glazed croissants:
- cottage cheese
- butter
- flour
And for the glaze…
- powdered sugar
- milk (or water)
- vanilla
- cinnamon (optional)
- pinch of salt!

These rolls are made with 3 ingredients! But you would never guess that. One bite and your family will be fighting over these rolls!
- 1 cup butter, softened (I used salted)
- 1 1/2 cup small-curd cottage cheese, 4% fat (12 ounces)
- 2 cups all-purpose flour (10 ounces)
- 1 cup powdered sugar (4 ounces)
- 2-3 tablespoons cream or milk
- 1/4 teaspoon vanilla
- pinch of salt
- sprinkle of cinnamon (optional)

In a medium-sized bowl, mix together the butter, cottage cheese and flour. This will make a sticky dough. Divide the dough into 2 and shape into a disc. Place them onto a piece of plastic wrap and wrap up and place in the refrigerator for about 2 hours or overnight. Let the dough soften for 15 min. before rolling out if you refrigerate overnight. (see not below for make ahead option)

After the dough has chilled for 2 hours, heat your oven to 350 degrees. Lightly spray your clean counter with cooking spray, then sprinkle flour over the surface and spread until smooth (I like to spray with cooking spray so the flour sticks to the counter better).

Place one of the disks of the dough onto the floured counter. Flour you rolling-pin and roll out until you reach about a 14" circle. Cut into 8 triangles. Roll them up from the large end, forming a croissant. Place onto a baking sheet lined with parchment paper. Bake for 30 to 35 minutes or until the tops start to turn golden with small spots (that's the cottage cheese). The bottom will be pretty dark and crispy.

Let the rolls cool for 5 minutes then drizzle them with the glaze and serve warm.

While the rolls are baking, mix together the glaze. In a small bowl, mix the powdered sugar with the milk or cream. Add the vanilla and a pinch of salt. You can add a dash of cinnamon if you want! Drizzle over the rolls. Enjoy!
- You can make these into smaller rolls by either cutting into 12 triangles instead of 8 or by divining the dough into 4 disks instead of 2. If you make these smaller, bake for less time.
