Balsamic Glazed Pork Roast
 
Ingredients
  • 2 pound pork loin
  • 1 tsp. rubbed sage
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. minced garlic
  • ½ cup water
  • For the glaze:
  • ½ cup brown sugar
  • 1 T. cornstarch
  • ¼ cup balsamic vinegar
  • ½ cup water
  • 2 T. soy sauce
Instructions
  1. Place your pork on a plate.
  2. In a bowl, combine the rubbed sage, salt, pepper and garlic.
  3. Press the seasonings onto the pork.
  4. Spray your slow cooker with cooking spray and place the seasoned pork inside. Then pour the ½ cup water along the sides.
  5. Cover and cook for 4-6 hours on low. The internal temperature of the roast should be 180 degrees.
  6. To make the glaze: combine all glaze ingredients in a small sauce pan. Bring it to a boil, stirring consistently until it thickens. (Should take a few minutes.)
  7. Drizzle some of the glaze over the roast and let it cook for 30 minutes longer.
  8. Remove the roast from the slow cooker and let it sit for 5 minutes. Using an electric knife (or a sharp knife if you don't have one) slice it thinly. Then drizzle more sauce over the top of the pieces of pork.
  9. Serve with roasted root vegetables or rice. Pour additional glaze over the vegetables if you want. I always do, it's delicious.
