Almond Roca Bars

This easy dessert has great almond flavor and comes together in 20 minutes. Perfect when you want something sweet and you want it fast :)
  • 1 cup butter
  • ½ cup white sugar
  • ½ cup brown sugar, packed
  • 1 egg
  • ¼ teaspoon salt
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1½ to 2 cups milk or semi sweet chocolate chips
  • sliced or chopped almonds, optional
  1. Preheat your oven to 350 degrees and spray a 13x9" pan with cooking spray.
  2. In a stand mixer or large bowl, Beat the butter and sugar together till combined.
  3. Add the egg, almond extract & salt then beat in the flour.
  4. Spread the dough into the prepared pan (you can spray your fingers with cooking spray or wet them if the dough sticks).
  5. Bake for 13-15 minutes or until it is set on the edges. If you like a more crispy bar, wait till it is set in the middle).
  6. Remove from the oven and sprinkle generously with chocolate chips. Let it sit for about 10 minutes then spread the chips when they have melted. If you are adding the almonds, go ahead and sprinkle them on so they will adhere to the chocolate.
  7. Let the chocolate set up or you can eat them still melty. Either way, these are good!
  8. Enjoy :)
I had whole almonds and just diced them up and sprinkled on top. You can use sliced almonds and I think toasted almonds would be great too.
