Barbecue Baked Beans with BACON! These are packed with flavor and easy to make!

I love going on trips with my family but I really dislike the packing park. I would rather unpack than pack any day! There are a few reasons why. One, I don’t like thinking “what will I feel like wearing”. I guess I am really moody when it comes to what I wear?! Also, it’s hard to know exactly what the weather etc. will be like so I tend to over pack as well. My husband is the same way. And then I have to pack for 3 little humans! So much pressure. We just went up to my parents cabin for the weekend and seriously, so much stuff. I have actually been trying to get rid of things we don’t need/use anymore and donate them to DI (Deseret Industries). But every time I turn around, there is STUFF everywhere. I obviously need to keep at it. I finally got our junk drawer cleaned out and organized and oh my goodness, that felt gooooood.

So about these beans. Hello baked beans with bacon on top. I love baked beans along with BBQ food. And this recipe caught my eye because one word, bacon. Why do you have to be so good?! So yeah, you start with bushes baked beans, add in some other goodness, put some bacon on top and bake (cause duh, they are baked beans). hehe. We all gave these beans 2 thumbs up. I didn’t add in the sausage, because we were having hamburgers along side and I didn’t feel we needed more meat. But if you are feeling rebellious add in the bratwurst and let me know how you like it!

Backyard Barbecue Baked Beans with Bacon

Barbecue baked beans topped with bacon are easy and perfect for a summer party!

Ingredients
  • ¼ cup barbecue sauce
  • ¼ cup ketchup
  • ¼ cup water
  • 1 Tablespoon spicy brown mustard
  • 1 Tablespoon cider vinegar
  • ½ teaspoon liquid smoke
  • ½ teaspoon garlic powder
  • 1 Tablespoon onion flakes
  • ⅛ teaspoon cayenne pepper
  • 1 (28 ounce) can baked beans (I used Bushes Original)
  • 1 (15 ounce) can pinto beans, drained & rinsed
  • 1 (15 ounce) can cannelloni beans, drained & rinsed
  • ½ of a (10 ounce) can Ro-Tel diced tomatoes & green chillies, drained
  • 3 slices thick-cut bacon, cut into 1" pieces
Instructions
  1. Preheat your oven to 350 degrees.
  2. Whisk barbecue sauce, ketchup, water, mustard, vinegar, liquid smoke, garlic powder and cayenne together in a large bowl.
  3. Add the baked beans, pinto beans, cannelloni beans & diced tomatoes. Pour into an 8x8" baking dish. Arrange the bacon in a single layer over the top of the bans.
  4. Bake until beans are bubbling and bacon is rendered, 1 to 1½ hours. Let them cool for 15 minutes before serving.
Notes
-To MAKE AHEAD: wrap in plastic and refrigerate for up to 24 hours. Bake for a little longer (1 hour 45 minutes).

-Original recipe added a pound of bratwurst (casing removed) and an onion, chopped. We were eating this with hamburgers and I didn't want to add more meat so I left this out.

-I already had bacon so I used 6 slices of bacon and just doubled them up to make it thicker.

Just a 1/2 teaspoon of liquid smoke adds such great flavor. Plus there are other recipes that you can use it in! I’ve cooked a pork roast with it in the slow cooker and it was divine. Here is a (aff.) link to the liquid smoke I used in this recipe–>

        I like cooks country too. It’s not the exact recipe, it’s minus the bratwurst, onion flakes instead of fresh onion, & yours is halved. The bacon shingled on top is what drew my husband in. 😊

    I tried this, minus smoke, didn’t have any, and it was great and so easy. The bacon is awesome and looks so interesting.
