5 Ingredient Blender Mini Muffins (Gluten & Grain Free!)

Got 5 minutes? Throw these 5 ingredients into a blender and you will have peanut butter/banana mini muffins before you know it. They are also gluten & grain free! The perfect healthy snack.
My kids are all about peanut butter. They eat it by the spoonful! I have to hide the jar so they won’t get into it. This recipe is great because it has 2 things that kids love, peanut butter & bananas. My kids gobbled these up! Super easy too. Just add everything to a blender and you’ve got a batter ready. I added the chocolate chips because, I just couldn’t help myself. Either way, try these out! I’m sure you will love them.
The texture is actually really good for having no flour. And for a healthy snack or quick breakfast, these are fantastic.

Serves: 24 mini muffins
Ingredients
  • 1 cup peanut butter
  • 2 medium sized bananas (ripe is sweeter!)
  • 2 large eggs
  • ½ teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons honey
  • dash of vanilla, optional
  • mini chocolate chips, optional
Instructions
  1. Preheat your oven to 400 degrees. Lightly grease your mini muffin pan.
  2. Put all the ingredients into a blender except the chocolate chips (if using) and blend until well mixed. Stir in chocolate chips.
  3. Pour batter into muffin pan. Drop a couple of chocolate chips onto the top of each muffin.
  4. Bake 8-9 minutes. Muffins will puff up quite a bit but will level after cooling.
Notes
I used regular peanut butter (it has sugar in it) so I didn't add the honey. If you use natural peanut butter, I would add honey for sure. My pan was non-stick and made the sides of the muffins brown fast. So watch them and take out right when they are done. You can also make these in a regular sized muffin pan, just cook longer.

    These were the most beautiful looking, non-flour muffins I’ve seen or made. But they tasted awful. I think the word “optional” should be removed by honey. That ingredient is probably a must. I actually used half regular peanut butter and half almond butter, both with sugar added in them. I didn’t add the honey because it said optional, (and read that it is needed for natural peanut butters). i should have added sweetener to them. I tasted the batter prior to baking and it wasn’t bad. So not sure why they turned out so terrible.

      I’m so sorry you didn’t like them! They are a “healthy” kind of muffin and are not that sweet. But with the added mini chocolate chips, my kids loved these. They aren’t the most delicious muffin but for a non-flour & no white sugar, I think they aren’t too bad. Hope you can find something else you enjoy on the blog. Thanks for stopping by!

      AMAZING! Our favorite muffins! We barely use any honey and use a very low sugar peanut butter – my guess is that anybody who complains that they aren’t sweet enough just eats too much sugar in general. I’ve shared this recipe several times with friends at their request. Thanks for posting!

      You can use any nut butter you wish! it will change the taste and I have never tried them with other butters but the original recipe source states nut butter of your choice. Hope that helps!

      You could try ground flax seed. Mix 1 T. with 3 T. water. It will add a slight nutty flavor to the muffins. If you try it, let me know how you liked it!

    These are amazing! My gluten-eating family loved them as did gluten-free me. I used raisins instead of chocolate chips but may use both next time! These will be great energy food for soccer tournaments, etc. and I think will become something I make quite often…..thanks!

    Delicious recipe. I considered that it might not be very sweet so I added 1/3 a cup of coconut sugar and it turned out wonderfully.

    I tried your recipe a week ago, and it was amazing! I made them for my husband even though I’am the only gluten free one lol but he loved it, and of course I did too! The only thing I changed was I added walnuts and I made 12 regular sized muffins so I had to adjust the cooking time slightly but they came out very tasty!

    I’ve been craving muffins lately so I had to try these, even went out and bought a muffin pan just for this recipe, and I’m glad I did. These will make a great little snack throughout the day. They turned out so cute, I actually did chocolate chips for only half the recipe and I like the ones without them more. I love the way these muffins made my house smell like a peanut butter. My dog was begging for them, I’ll have to make one without the honey/vanilla next time just for her, she’d probably go nuts for it. I didn’t use apple cider vinegar though, forgot to write it down when I made them and they puffed up and never leveled out. I like them puffed though, they look like tiny little muffins that way.

    I just made these and LOVED them! Super easy, adorable, and they taste like banana bread! I like the other suggestion to add walnuts next time, though I would probably grind them up pretty fine since these are so light and fluffy. Thank you so much!

    My whole family loves these. I love that they are healthier and gluten free. I didn’t put in the apple cider vinegar – curious what that is for and I substituted maple syrup instead of honey. So moist! So good! Thanks for posting.

      Good to know that maple syrup worked! The apple cider not only has health benefits (make sure you use the one with the “mother”) but the acid in the vinegar helps activate the baking soda, which can enhance the leavening or rising of the muffins, making a better crumb. But even without it, they will work! It is used often in gluten free baking πŸ™‚ Thanks for the feedback!

    I am by no means a baker and always look for easy recipes. I had bananas that needed to be used up and have recently gone gluten free for health issues. I make smoothies all the time so thought that I would be looking for a more liquid consistency for the batter, but decided to stop blending before blowing the motor. Spooning the batter into paper lined muffin cups became a challenge, for me, and my dog, Tristan, was just praying for something to drop on the floor. I must admit they smell awesome and look amazing! I had to bake them longer, perhaps because I used paper liners? We’re still waiting for them to cool, but took a little nibble, they taste pretty good! My husband is impressed and thinks that there is hope for me being a baker after 22 years of marriage. πŸ™‚

    Hi there, I made these last night for my niece who is GF and they were a big hit πŸ™‚ I used regular jarred PB, dark chocolate chips, and after reading that they may not be sweet enough for some, I opted to add the honey and just shy of a 1/3 cup of sugar.. So quick and easy.. I will try a little less sugar next time and use brown or maybe just a bit more honey instead. I found they did stick to my non-stick mini muffin tin even though I also oiled them, but not too bad.. I also had extra so made 3 regular size muffins, using silicone cups, perfect! I had to leave them in for about 15 mins though, as still not cooked. Thanks for a really tasty recipe the whole family loved :))

      You can fill them almost to the top. They will puff up a bit but settle down after cooling. I would just evenly divide the batter among the muffin cups, and just don’t fill them up all the way, leave a little room to rise. Hope that helps and that you enjoy them πŸ™‚

    These are yummy. They satisfy that sweet tooth or work great as a lil breakfast munchie with fruit. The recipe was easy and if you follow it verbatim…your muffins turn out perfectly. Mine look exactly like the picture and I even used almond butter. Delicious and a def staple in my ever growing paleo recipes!!

    So I tried this recipe exactly as directed and my muffins came out flat and gooey.:( I did not use peanut butter but I did use honey. Any thoughts as to why this happened? Maybe it was the bananas?

      Probably cause you didn’t use peanut butter I would think. I’ve never made them without the peanut butter.

    My friend made these as baked donuts and they were delicious! So I asked for the recipe…..and no one in my house is gluten-free! My blender died though. Is there another way to mix these? I usually just stir my muffin ingredients together with a spoon. Would that work if I mashed the bananas really well first? I do have a stand mixer, an immersion blender and food processor if you think one of those might work. Can’t wait to make these this weekend for my grand babies πŸ™‚

    I made these today and they were so easy and delicious!!! My 5 year old loved them. Its helps the sweet craving. I am currently 7 months pregnant and was told I need to cut back on the carbs and sugar. These were perfect little treats because I used all natural no sugar added peanut butter, local honey, and it was great! Thanks for the great recipe!

    These were amazing! They had the perfect texture, just like traditional muffins made with flour. I followed the recipe exactly, except I left out the chocolate chips because I wanted them to be healthier. Even without the chocolate chips my picky four year gobbled them up. They taste similar to banana bread. I did not use a blender, just a regular bowl and hand mixer and they still turned out great. Thank you for the recipe!

    How do you store these muffins? I love making them but notice they have tendency to get moldy when I put in my glass covered cake holder.
