Cherry Chocolate Chunk Bundt Cake


  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup oil (canola or vegetable)
  • 2 teaspoons vanilla
  • 1 (21 ounce) can cherry pie filling
  • 1 cup chocolate chips or chunks
  • powdered sugar (for topping)


  • 2 cups semi-sweet chocolate chips
  • 3/4 to 1 cup heavy cream
  • 1 teaspoon vanilla
  • 2 tablespoons corn syrup (optional)


  1. Heat your oven to 350 degrees. Grease a bundt pan well. I use cooking spray with flour in it and spray well. Or you can grease with butter or shortening. 

  2. In a large mixing bowl, stir together flour, sugar, baking soda, cinnamon and salt. 

  3. In another bowl, combine eggs, oil and vanilla. Add this to the flour mixture. Mix well, the batter will be thick. Carefully stir in the cherry pie filling & chocolate chips.

  4. Put the mixture into the prepared bundt pan and bake for 55 minutes to 1 hour. 

  5. Let cool for 15 minutes then invert onto a cake platter or plate. Finish with powdered sugar or chocolate ganache. 


  1. Place the cream in a small glass bowl and microwave till warm, about 1 min. Use 3/4 to 1 cup cream, depending on how thick you want your ganache. Add the chocolate chips to the warm cream and let sit for about 1 min. Whisk till smooth. Stir in the vanilla & corn syrup then pour over the cooled cake. 

Recipe Notes

You can use chocolate chips or chunks. I made this with the chocolate chunks from Trader Joes. But any chocolate chip will work! Also, feel free to cut the ganache recipe in half if you want. I've done it both ways!
