A classic cookie with peppermint, white chocolate and a creamy peppermint crunch!
In case you forgot I am all about white chocolate. My husband? not so much. Which is a real drag. He says that peppermint should only be used in toothpaste! hehe. How do you not like peppermint and chocolate together? But I respect that he likes his treats simple. Less is more in the dessert department for him. That being said, I do bake for myself sometimes. And I am lucky that I have plenty of people to share my baked goodies with too 🙂
These cookies are pretty basic. But add in a little peppermint extract and some peppermint crunch chips and you’ve got yourself a wonderful christmas cookie that is pretty darn cute too. You sprinkle on a few extra chips after they bake to make them extra pretty. Cookies can be cute, even if you don’t decorate them like a pro. (Aren’t those cookies adorable though! I think I need to buy her “online cookie party” so fun!) Anyways, bake these up and pass them out to all your friends or just keep them for yourself. It’s peppermint season so now is your chance 😉
- 1 cup butter, softened
- 1 cup brown sugar
- ½ cup white sugar
- 2 large eggs
- 1 Tablespoon vanilla
- ½ teaspoon peppermint extract
- 3 cups (15 ounces) flour (spoon and level into the cup)
- 2 Tablespoons cornstarch
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup white chocolate chips, plus additional for topping (optional)
- 1 cup Andes peppermint crunch
- Preheat your oven to 350 degrees. Line your cookie sheets with parchment or a silpat mat.
- Cream the butter and sugars. Add the eggs and mix just until creamy. Add the vanilla & peppermint extract and stir (or mix in mixer) to combine.
- In another bowl, stir the flour, cornstarch, baking soda & salt together. Add to the creamed mixture.
- Stir in the white chocolate chips & peppermint crunch chips just until combined
- Scoop into balls (my cookie scoop is 1½") and bake for 9-11 minutes. (I cooked mine for 9 because I like a softer cookie).
