White Chocolate Cranberry Oatmeal Cookies

Serves: 3 dozen
- ½ cup butter, softened
- ¾ cup sugar
- ¼ cup brown sugar
- 1 egg
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup flour
- 1½ cup quick oats
- ¾ cup dried cranberries
- 1 cup white chocolate chips
- Preheat your oven to 350 degrees. In a large bowl combine the sugar, brown sugar and butter with the paddle attachment for hand mixer.
- Add the egg and vanilla and blend well.
- Add the cinnamon, nutmeg, baking soda, salt and flour.
- Fold in the oatmeal, dried cranberries and white chocolate chips.
- Roll the dough into 1 inch balls or use desired size cookie scoop. Place them on a parchment lined* or greased baking sheet, 3 inches apart.
- Bake for 9-10 minutes, just until the edges are lightly golden.
