Chewy Coconut Granola Bars

These are better than store bought! They taste great & are healthy too!
  • 2 cups rolled oats
  • 1 cup wheat flour
  • ½ cup wheat germ
  • ¾ teaspoon sea salt
  • ¾ cup unrefined coconut sugar
  • ½ cup mini chocolate chips
  • ½ cup unsweetened (light) shredded coconut*
  • 1 egg
  • 1 tablespoon vanilla
  • ½ cup coconut oil
  • ½ cup honey
  1. Preheat your oven to 350 degrees. Grease a 9x13 inch baking dish.
  2. Mix the oats, flour, wheat germ, salt, sugar, chocolate chips and coconut in a medium sized bowl. Set aside.
  3. In a large bowl combine the egg, vanilla, oil and honey. (Measure the oil first, then the honey will pour out of the cup easily) Add the dry ingredients to the wet ingredients and stir till combined.
  4. Press mixture into your prepared dish and bake for 20 minutes (just until edges are slightly brown).
  5. Let cool for 5 minutes before slicing into bars. I suggest you cut desired width of your bars then cut down the middle of the pan, making 2 bars on each side. Makes about 18-20 bars. Store in an airtight container.
*I found the shredded coconut at sprouts. I use the light version. The shredded is great because they are very small pieces and kids don't notice it. If you can't find shredded coconut, you could put the coconut in a food processor before adding it. I use coconut oil, I like the flavor it adds. But you could use vegetable oil if you prefer. Coconut sugar can be found at wal-mart or sprouts in the baking isle.
