Oatmeal Fudge Bars

Oatmeal cookie meets chocolate fudge with these easy and delicious bars!
  • 2 cups brown sugar, packed
  • 1 cup plus 2 Tablespoons butter, softened (divided)
  • 2 teaspoons vanilla (divided)
  • 2 eggs
  • 3 cups quick oats
  • 2½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt (divided)
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) package semi-sweet chocolate chips
  1. Preheat oven to 350 degrees. (325 degrees if using a half sheet/jelly roll pan 13"x18") Spray a 9x13 or half sheet with cooking spray then line with parchment paper.
  2. Combine the brown sugar and 1 cup of the butter and beat until fluffy. Add in 1 teaspoon of the vanilla and the eggs and beat until smooth. In another bowl, combine the oats, flour, baking soda and ½ teaspoon salt. Add the dry ingredients to the wet mixture until combined.
  3. Reserve ⅓ of the mixture. Press the rest into the prepared pan.
  4. In a small saucepan, combine the sweetened condensed milk, chocolate chips and remaining butter and cook over medium-low heat. Stir constantly until melted and smooth. Remove from heat and stir in the the remaining 1 teaspoon of vanilla and ½ teaspoon salt. Spread the chocolate mixture over the oat mixture in the pan. Now drop the remaining oat mixture by teaspoonfuls over the chocolate mixture.
  5. Bake for 20-25 minutes or until golden brown. Let cool completely before cutting into bars.
  6. Store in an airtight container.
UPDATE: I recently made this in a jelly roll / half sheet cookie pan (they are about 13"x18") and loved it! Makes the bars a little thinner but will feed a crowd. I sprayed the cookie sheet with cooking spray, then lined it with a parchment sheet and made as directed. Just press ⅓ of the oatmeal dough in the bottom of the pan. If it doesn't reach the edge thats ok, just press it as close as you can. Spread with the fudge and top with remaining oatmeal dough. I just crumble it over the top then lightly press it into the fudge. BAKE it for 20-25 minutes at 325 degrees. Just until light brown.
