Chocolate Parfait Cookies (Jacob Lake Inn Bakery)
These are easy and a great change to your regular chocolate chip cookies. They taste just like the ones you get at the Jacob Lake Inn located in northern Arizona!
  • 1 cup butter
  • 1½ cup sugar
  • 1 egg
  • 1 Tablespoon vanilla
  • 2 cups chocolate chips (good quality milk chocolate, like guittard or ghirardelli)
  • 2½ cups flour
  • 1 teaspoon salt
  1. Preheat your oven to 350 degrees. Line your cookie sheets with a silpat mat or parchment paper (or you can spray with cooking spray).
  2. Cream the butter & sugar. Add the egg & vanilla and mix till combined.
  3. Add the flour, salt & chocolate chips, mixing till combined.
  4. Use a cookie scoop or spoon to make 1½ Tablespoon sized balls. Place on prepared cookie sheet.
  5. Bake for 8-9 minutes (bottoms will be golden but the top will not brown).
Original recipe called for 2 Tablespoons of vanilla. I felt that was a little strong, so I would recommend starting with 1 Tablespoon and see how you like that.
