These are easy and a great change to your regular chocolate chip cookies. They taste just like the ones you get at the Jacob Lake Inn located in northern Arizona!
Ingredients
1 cup butter
1½ cup sugar
1 egg
1 Tablespoon vanilla
2 cups chocolate chips (good quality milk chocolate, like guittard or ghirardelli)
2½ cups flour
1 teaspoon salt
Instructions
Preheat your oven to 350 degrees. Line your cookie sheets with a silpat mat or parchment paper (or you can spray with cooking spray).
Cream the butter & sugar. Add the egg & vanilla and mix till combined.
Add the flour, salt & chocolate chips, mixing till combined.
Use a cookie scoop or spoon to make 1½ Tablespoon sized balls. Place on prepared cookie sheet.
Bake for 8-9 minutes (bottoms will be golden but the top will not brown).
Notes
Original recipe called for 2 Tablespoons of vanilla. I felt that was a little strong, so I would recommend starting with 1 Tablespoon and see how you like that.
