Cranberry Cheesecake Bars

These bars are filled with oats, cranberry, white chocolate chips & a cheesecake like center.
  • 2 cups flour
  • 1½ cups quick or old fashioned oats
  • ¼ cup brown sugar
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 cup butter, softened
  • 2 cups white chocolate chips
  • 1 (8 ounce) package cream cheese
  • 1 (14 ounce) can sweetened condensed milk
  • ½ cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 (16 ounce) can whole-berry cranberry sauce
  • 1 Tablespoons cornstarch
  1. Preheat your oven to 350 degrees. Spray a 9x13" dish with cooking oil.
  2. Combine the flour, oats and brown sugar in a large bowl. Add the butter and mix until crumbly. Stir in the white chocolate chips. Reserve 2½ cups of the mixture for the topping.
  3. With floured fingers, press the remaining crust mixture into the prepared pan.
  4. Beat the cream cheese until creamy. Add the sweetened condensed milk, lemon mice & vanilla. Mix until smooth. Pour this mixture over the crust.
  5. Combine the cranberry sauce and cornstarch in a medium bowl. Spoon this mixture per the cream cease mixture then sprinkle the remaining oat mixture over the top. Press it down slightly.
  6. Bake for 35-40 minutes or until center is et. Cool completely before cutting into bars. Cover and refrigerate until ready to serve. (These can be made the day before if needed).
