Sweet Cornbread

- 1 cup cornmeal
- 2 cups flour
- 1½ cup sugar
- 1 T. baking powder
- ½ tsp. salt
- ¾ cup butter, melted
- 1 cup evaporated milk
- 1 tsp. vanilla
- 4 large eggs (white and yolks separated)
- ¼ cup butter (optional)
- Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan.
- Separate the eggs, putting the whites in a small bowl and the yolks in a medium bowl.
- Combine cornmeal, flour, sugar, baking powder & salt in a large bowl. Set aside.
- Add milk, vanilla and melted butter to the medium bowl with the yolks. Stir.
- Pour the liquid mixture in to the dry mixture.
- Beat egg whites in a separate bowl until stiff.
- Fold stiff egg whites into batter. Pour into the greased pan.
- Bake for 30 minutes (or until tests done with toothpick)
- Optional (but very good): While hot, melt ¼ cup (1/2 stick) butter over the top.
