A thick and chewy chocolate chip cookie bar! Loaded with milk chocolate chips, these are the perfect cookie bar for a classic chocolate chip cookie lover.
We are moving soon and I’ve started the dreaded packing/cleaning out process. It feels good to go through all our things and clean out the stuff we don’t need or use anymore. I’ve already got a bunch of piles to donate and it feels good. I don’t love making decisions and sometimes will stress over silly things, so I am trying to just make a quick decision and move on to the next thing to pack. Anyone else struggle with that? Have any advice & or secret packing strategies you can share? I’m all ears!
Well enough about packing, lets talk about dessert. Hello there cookie bar! Where have you been all my life?! No but seriously, I am trying to figure out why I don’t make these more often?! I have tried some different receipts for cookie bars in the past, but these are my favorite for sure. They are a lot easier than traditional cookies, but are just as delicious. And they are thick and chewy so that is a bonus. My husband said that these might be his most favorite treat! He likes things simple but flavorful. I like things over the top and flavorful. His favorite cookie is your basic chocolate chip cookie, so I usually make those and this is just that but in a bar form. If you love a classic chocolate chip cookie give these a try! They come together in no time at all and will put a smile on the face of whoever you share them with! Because sharing is caring…and we gotta share those calories too right?! 🙂
- 2⅛ cups flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 12 tablespoons butter (1½ sticks), melted and cooled slightly
- 1 cup light brown sugar
- ½ sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups milk chocolate chips
- Preheat the oven to 325 degrees. Adjust the oven rack to lower-middle position. Line a 9X13-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch. Spray the foil with nonstick cooking spray.
- Mix the flour, salt, and baking soda together in medium bowl then set aside.
- Whisk the melted butter and sugars in a large bowl until combined. Next, add the egg, egg yolk, and vanilla mixing well. Using a rubber spatula, fold the dry ingredients into the egg mixture until just combined; do not overmix. Fold in the chocolate chips and turn the batter into the prepared pan, smoothing the top with the spatula.
- Bake until the top of the bars are light golden brown, slightly firm to the touch, and edges start pulling away from sides of pan (About 24-28 minutes. I cooked mine for 27 minutes.)
- Cool on a wire rack to room temperature. Remove the bars from the pan by lifting with the foil "handles" or overhang and transfer them to a cutting board. Cut into desired size squares or rectangles.
- Enjoy!

Edible (Egg-less) Cookie Dough

I am seriously drooling over these. These chocolate chip cookie bars look to die for. I am definitely making this recipe! I’ve already pinned it and next week looks like as good of time as any! 🙂
On a side note, I am redesigning my blog and was wondering what plugin you are using for your post share icons? These were shown with the foodie pro template I purchased, but apparently didn’t seem to get the plugin.
Thank you! I look forward to checking out your other recipes!
Awesome, I hope you like them! And thanks for pinning 🙂
I believe that it is the Genesis Simple Share plugin. (My graphic designer installed that for me) Hope that helps!
Totally. I must of removed it when I was working on my theme. Thank you!
My mouth is watering over these Chewy Chocolate Chip Cookie Bars. But, I have a question about the 1/2 sugar do you mean a 1/2 cup of sugar?
yes, 1/2 cup. Sorry, I will update that. Thanks!
Just a tip: I made these vegan and they turned out excellent! Thanks for the recipe!
You are so welcome, glad to know they work vegan! What egg & butter replacement worked for you?
These chocolate chip bars are perfection I will only use this recipe for chocolate chip bars/ and or cookies thanks for the reciepe! Amazing!!
Thanks for the feedback, glad you enjoyed these. They are a favorite of mine as well 🙂
instead of using melted butter can i use it in room temperature?
i’ve never tried that before so I can’t say the results will be the same. If you try it, let me know what you think!
These chocolate chip cookie bars are wonderful and so easy! Thank you! I’ve made them at least three times in the past few weeks to bring with dinners for families who flooded.
Wondering you would recommend freezing the dough or cookies if I just need half. Thanks!
How nice of you to take these to those families! I would freeze the dough then bake when needed.
I;m making these right now and they are a bit dry. What did I do wrong?
You probably over cooked them. You want to take them out when the top is just set and don’t look wet. If you cook them too long they will be dry. Hope that helps!
These are perfect! I used additional chips- mini and regular (Ghiradelli) Yummo!
Really liked how more cookie like these are- not Casey kind.
The best recipe!
thank you! I like the idea of using mini and regular size chocolate chips, sounds amazing!
Is this a high altitude recipe? Or could I use my own cookie recipe in a 9×13 pan @ 325 for ( give or take ) 15 minutes?
this is not. I live in Phoenix, AZ area. You could try that. I am not sure of the results though.
